Chicken chow mein

As much as we might love turkey and ham, over the festive season it is nice to  enjoy other cuisines that allow us to use our garlic. One of these is Asian. Something else we love are dishes that can be cooked up in less than 20 minutes. One such dish is Chicken Chow Mein.

If the thoughts of turkey and stuffing sandwiches on the 27th December don’t float your boat and you’re wondering what else can you rustle up in the kitchen, here’s a quick and extremely easy recipe anybody can follow that will serve 3 people…

What you’ll need
- 2 large chicken breasts, cubed
- 2 tbsp of sunflower oil
- 150g of straight to wok noodles
- 1 garlic clove crushed (or 2 if you’re looking to pack a punch)
- 100g fresh beansprouts
- 1 red pepper, deseeded and thinly sliced
- 1 carrot, thinly slices
- 100g pak choi
- 1 red onion, sliced
- 4 tbsp soy sauce
- 1 tbsp sesame oil

Method

Heat a wok over medium heat, then add the sunflower oil. Add the chicken and cook for five minutes. Add the garlic and cook for a further minute. Add the beansprouts, pepper, red onion, carrot and pak choi for a further three minutes. When the vegetables have softened, add noodles and toss well. Finally, add the soy sauce and sesame oil and toss once more until thoroughly combined.

Transfer to warmed serving dishes and serve immediately.
